A birthday.

A year ago a little blog was born.
Thanks for giving me an outlet to share with you guys.
All of you are the best. Ever.
In the spirit of all things being birthday festive, 
I give you a major sweet tooth recipe J and I tried
a couple of weeks ago.





Birthday Cake Pancakes.
Seriously, these pancakes are le-git.
Do yourself a favor.


Calls for:
1 1/2 cups all-purpose flour
1 cup yellow cake mix (I love a ton of sprinkles, so I used Funfetti cake mix)
1 Tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 1/2 cups buttermilk
1/2 cup milk
2 Tablespoons butter, melted
1 teaspoon vanilla extract
1/3 cup (1.75 oz bottle) sprinkles

For the icing (if you're feeling really crazy):
whipping cream
powdered sugar


 Heat your nonstick skillet over medium heat.
 In a large bowl, combine the flour, cake mix, sugar, baking powder, soda and salt; put aside.
In a separate medium bowl, lightly beat the eggs with whisk. 
Add the milk, butter and vanilla and whisk to combine. 
Pour the wet ingredients into the bowl with dry ingredients and stir until mixed. Fold in the sprinkles.
Scoop 1/3 cup of batter onto the skillet, leaving room for the batter to spread into larger rounds. 
When the pancakes bubble, flip and cook for another 1-2 minutes. 
Transfer to a plate. If you'd like to keep them warm, try covering with warm kitchen towel.
Serve with syrup or optional icing.

For the icing, mix together your powdered sugar and whipping cream 
until you reach a desired consistency and taste. 
Pour over pancakes. YUM.

A look-back.

2012. What a time you were.
 Jobs were changed, homes were moved, toupees were worn 
{by dogs no less, but that still equals a great time in my book}. 
Can't wait to see what curve balls 2013 will throw at us. 
One thing is for sure, as long as I've got this stud, everything will be peachy.

I'm really feeling the gameday spirit today since J and I are going to Tuscaloosa
 this weekend to cheer on the Tide. When I have a date with Bryant-Denny,
 a cute top and skinny jeans are my go to items for cooler gamedays.
 Hate to jet off! But we're heading out this afternoon.
 Can't wait for a fun weekend of tailgating with the fam.
As you can see, it's kind of our favorite thing.

Time-out.

Long lost Friends! Missed you guys.
Do you hit moments where life seems to be getting faster and faster?
The faster it gets, the slower you move?
 That never-ending to-do list seems to get longer, and longer,
 to where there's no end in sight?
That's me lately. Times a hundred.
So I took that little "pause." A break, if you will,
to step back, organize, and re-prioritize some things.
I created this blog, this small space of expression, 
to share Jonathan and my's life together.
I never, ever want it to become a burden or another "item" on that to-do list.
With that spill out of the way, 
it is good to be refreshed and and get back to this little blog,
and the bits of "happy" it brings.
I leave you folks with another fall happening J and I decided to hit up: the fair!
You know we never pass up a chance to savor
some Southern fried goodness.
And for the record, we did not have the doughnut burger.
That's a little out of our comfort zone;)



 Fried Oreos. Get you some.
